אתחיל בדוגמה שממחישה למה אני מעריך את המקום: בעבר הזמנתי אוסובוקו חזיר והרגשתי שהנתח צריך עוד זמן קצר בתנור כדי להתפרק בנגיעה. העברתי את ההערה לבעלים שעבר במקרה ליד השולחן. בערך שנה לא הזמנתי את המנה בביקורים שלי, ואז שוב ניסיתי — והפעם זה השתפר, כמעט כמו המנה שאכלנו בפראג. מעבר לכך, זה המקום שבו אני נוהג לחגוג ימי הולדת. לפעמים אני קופץ לגמרי לבד בשביל בירה וקינוח, לפעמים מגיע עם בת הזוג, ולפעמים עם קבוצת חברים או לקוחות. בכל מצב אני נהנה גם מהמנות וגם מהשירות.

נדמה לי ששמה אריאנה. באירוע בת מצווה שבו נכחנו קיבלנו יחס יוצא דופן ממלצרית מקסימה—שירות מצוין, עם חיוך שלא נעלם לרגע והרגשה ברורה שהיא עושה זאת בשמחה. תודה רבה!

לא טרחו לעדכן אותנו, למרות שהשארנו מספר טלפון ודוא״ל. כשהגענו למקום סירבו לקבל אותנו בלי סיבה ברורה; לטענתם ההזמנות נסגרו. ביצעתי הזמנה, וכל זה משדר חוסר רצינות.

הצוות הפגין מקצועיות ואדיבות. חגגנו יום הולדת ל־45 משתתפים בחדר האירועים של המסעדה. האוכל היה מצוין והאווירה נעימה. יצאנו מרוצים מאוד.

למרות שהמנות היו טעימות מאוד, כל מה שמסביב לשירות ולניהול אכזב. היינו שם לציון יום הולדת ולכבוד השנה האזרחית החדשה שבפתח. הגענו כעשר דקות לפני השעה שתואמה, והתבקשנו להמתין מחוץ למסעדה או ליד הדלת—אזור קר שלא מתאים בכלל להמתנה. רק אחרי רבע שעה הכניסו אותנו, ושיבצו אותנו בשולחן ממש בפתח האולם: מצד אחד דלת הכניסה שמכניסה רוחות, ומהצד השני מטבח עם דלת פתוחה שבו ממש רואים איך שוטפים סירים. לאחר פניות חוזרות העבירו אותנו סוף־סוף למיקום סביר.
הזמנו את הארוחה: העיקריות יצאו תחילה, ורק אחרי תזכורות מאיתנו הגיעו המנות הראשונות, בעיכוב של כ־10 דקות. כשהגענו לשלב המתוקים הזמנו קינוחים ומשקאות חמים. השתייה החמה הגיעה במהירות, אבל הקינוחים לא נחתו. רק אחרי כמה תזכורות וכעבור 25 דקות הופיעו הקינוחים.
קראנו למנהל המשמרת; הוא לא ממש הבין את הטענות שלנו. הוא אמר משהו כמו "כן, היה קצת עיכוב", הציע משקאות חמים נוספים על חשבון הבית—הצעה שסירבנו לה—ולא טרח להתנצל, כאילו מבחינתו אין כאן בעיה.
בשורה התחתונה: אוכל נהדר, ניהול מטבח לקוי ושירות לקוחות בעייתי. במסעדה אנחנו מצפים לא רק לטעם טוב, אלא גם להגשה בזמן, חיוך וקצת תשומת לב.
